CREAMY BACON & POTATO SOUP

🥓INGREDIENTS:
- 6 slices bacon
- 2 tbsp. butter
- 1 stalk celery, chopped
- 4 cups chicken stock, or enough to cover potatoes
- 4 cups cubed potatoes
- ½ cup chopped carrots
- ½ cup chopped onion
- ⅛ tsp. cayenne pepper
- ½ cup shredded Cheddar cheese
- ½ tsp. kosher salt

🍳INSTRUCTIONS:
1. Cook bacon in a saucepan until crisp, about 10 min, drain, and reserve 1/4 cup grease.
2. Sauté onion, carrots, and celery for 3-4 minutes.
3. Add broth, potatoes, and cayenne pepper; boil, reduce heat, simmer until potatoes are tender, 10-15 minutes.
4. Stir in cheese and butter until melted. Season with salt, and serve hot.
