Roasted Broccoli Salad with Bacon Dressing

🥓INGREDIENTS:

- 6 cups broccoli florets, cut into 1- inch pieces (about 2 heads)
- 3 tablespoons olive oil
- Kosher salt and freshly ground black pepper
- 4 slices thick- cut bacon, cut into 1- inch strips
- 1/2 small red onion, diced (about 1/3 cup)
- 1/4 cup apple cider vinegar
- 2 tablespoons sugar
- 1/2 cup toasted walnuts, chopped

🍳INSTRUCTIONS:

Step 1:Preheat oven to 400 degrees Fahrenheit.

Step 2:Toss broccoli with oil and sprinkle with salt and pepper to taste. Spread broccoli evenly on baking sheet. Roast for 15 to 20 minutes, until buds begin to char and stems are slightly softened.

Step 3:Meanwhile, heat bacon in a small skillet over medium heat. Stir occasionally until fat is melted and bacon is almost crisp, about 5 minutes. Reserve bacon grease. Add onion to skillet and cook for 2 to 3 minutes, until slightly softened. Add vinegar and sugar, stirring until sugar is dissolved, about 1 minute.

Step 4:Place roasted broccoli in a large bowl, pour bacon sauce and walnuts over top and toss to coat. Serve hot or at room temperature.
