🥓INGREDIENTS:
- 1/3 pound bacon
- 2 cans pinto beans , drained and rinsed
- 2 tbsp. bacon grease
- ½ yellow onion, finely diced
- 1 tsp. salt
- 2 garlic cloves, minced
- ½ cup vegetable stock (or chicken stock, or water)
- 1 tsp. ground cumin
🍳INSTRUCTIONS:
Step 1: Cook bacon in a skillet, set aside. Reserve 2 tbsp bacon fat.
Step 2: Heat bacon fat (or oil) in a pot over medium heat. Cook onion and garlic until translucent, about 5 minutes.
Step 3: Add cumin and salt, cook until fragrant, about 1 minute. Add beans and stock, simmer for 15 minutes.
Step 4: Mash beans to desired consistency. Add more stock for a thinner texture. Stir in chopped bacon, season to taste, and serve warm.
