🥓INGREDIENTS:
- 10 ounces bacon, finely chopped
- ⅓ medium red onion, minced
- ⅓ cup granulated sugar
- ⅓ cup white vinegar
- Salt and pepper
🍳INSTRUCTIONS:
1. Fry bacon in a skillet over medium heat until crisp for 5 minutes. Transfer to a bowl.
2. Reserve 1/4 cup bacon fat in skillet, adding olive oil if needed. Heat until shimmering.
3. Add onion, sugar, and vinegar. Cook until onion softens, about 3 minutes. Season with salt and pepper.
4. Toss vinaigrette with greens and sprinkle with bacon or stir bacon into dressing and toss with salad.
