Turkey Bacon Double Cheeseburger with Fire Roasted Tomato Sauce

🥓INGREDIENTS:

- 8 slices turkey bacon
- 2 1/2 pounds ground turkey breast
- 2 green onions, finely chopped
- A handful cilantro, leaves finely chopped
- 1 tablespoon chipotle chili powder
- 1 1/2 teaspoons smoked sweet paprika
- Salt and freshly ground black pepper
- 2 teaspoons zest and the juice of 2 limes
- 1 red onion, chopped
- 1 tablespoon Worcestershire sauce
- 2 tablespoons brown sugar
- 1 (15- ounce) can fire- roasted diced tomatoes, lightly drained
- 2 rounded tablespoon grainy mustard
- 8 slices pepper jack cheese, from the deli counter
- 4 large hamburger buns, lightly toasted

🍳INSTRUCTIONS:

Step 1:
Heat a large nonstick skillet over medium to medium-high heat and add the turkey bacon. Cook until crispy on both sides, 3 minutes per side, then remove to a plate. Reserve 1 tablespoon of bacon grease in the pan.
Step 2:
While bacon is cooking, combine turkey breast, scallions, cilantro, jalapeno, chili powder, salt and pepper, lime zest, and lemon juice. Mix turkey breast with seasoning and divide into 4 pieces, 2 patties each.
Step 3:
Add first 4 patties to pan; cook 3 to 4 minutes per side. Remove from skillet, place on a plate, and cover loosely with foil to keep warm.
Step 4:
While first batch of burgers is cooking, heat 1 tablespoon of bacon grease in skillet over medium-high heat. Add onion and cook 3 to 4 minutes, season with salt and pepper, then add Worcestershire sauce, brown sugar, tomatoes, and mustard. Bring sauce to a boil.
Step 5:
Add second batch of burgers to skillet and cook 3 to 4 minutes per side. Top with one slice of cheese and 2 slices of bacon. Cover skillet with foil and cook over low to medium heat until cheese is melted, about 1 minute.
6. Add burgers. Top with Bacon Double Cheeseburger, Fire Roasted Tomato Sauce.
