Bacon Ranch Cornish Hen

🥓INGREDIENTS:

- 1 Tyson Cornish Hen
- 4 slices of bacon, cooked and crumbled
- 2 Tbsp. butter, melted
- Kosher salt
- Freshly ground black pepper
- 1 lb. baby potatoes, quartered
- 1 Tbsp. extra- virgin olive oil
- 2 Tbsp. bacon grease (divided)
- Chives, for garnish
For Ranch Brine:
- 1 packet of ranch seasoning mix
- 3/4 c. chicken broth
- 1/2 c. buttermilk
- 2 Tbsp. olive oil

🍳INSTRUCTIONS:

Step 1:
Preheat the oven to 400°F (200°C).

Step 2:
Remove the Cornish hen from the zip- top bag, pat it dry, and then brush with the melted butter mixed with the remaining 1 tablespoon of bacon grease. Season all over with salt and pepper. Roast for 1 hour 15 minutes, or until the skin is golden and crisp and a thermometer inserted into the thickest part of the bird reads 165°F.

Step 3:
To roast potatoes: Toss the quartered baby potatoes in olive oil and any remaining bacon grease. Season with salt and pepper, then spread in an even layer on a large baking sheet. Roast at 400°F until tender, about 40 minutes.

Step 4:
Top the roasted potatoes with chopped chives and crumbled bacon. Serve alongside the roasted Cornish hen.
