🥓INGREDIENTS:
- 1 tablespoon cayenne pepper
- 1 tablespoon garlic powder
- 2 tablespoons dark brown sugar
- 1/2 teaspoon black pepper
- 1/2 teaspoon curry powder
- 6 slices thick cut bacon
- 1/2 loaf sourdough bread cut into 24 (2- inch long and 1- inch) thick rectangles
- 4 eggs
- Sea salt
🍳INSTRUCTIONS:
Step 1:
Preheat oven to 220 degrees Fahrenheit.
Step 2:
In a small bowl, add cayenne pepper, garlic powder, brown sugar, black pepper, and curry powder and stir to combine. Spread spice mixture on a baking sheet and place in oven for 2 minutes. Meanwhile, separate bacon slices. Remove pan from oven and place bacon slices in a single layer on spice mixture. Flip bacon so spice mixture lightly coats both sides of each slice.
Step 3:
Place bacon in a large nonstick skillet over low heat and cook until golden brown. NOTE: Bacon is more likely to burn due to the presence of brown sugar, especially if cooked too quickly at high heat. As bacon is cooked, use a slotted spoon or spatula to transfer bacon strips to paper towels to drain. Drain any excess fat from skillet, but leave a small layer in the pan.
Step 4:
Turn oven temperature to 350 degrees Fahrenheit. Place bread on a baking sheet and place in center of oven. When bread is done, remove from oven and set aside.
Step 5:
Return the nonstick pan to the stove over medium- low heat and crack 2 eggs into the nonstick pan. Do not overfill. Season lightly with salt. Cook to desired doneness. Transfer the eggs to a plate and arrange the bacon and bread slices around the eggs. Serve immediately.
