🥓INGREDIENTS:
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons ground black pepper
- 1 teaspoon kosher salt
- 1 teaspoon sugar
- 1/4 teaspoon baking soda
- 8 tablespoons unsalted butter, cubed and chilled
- 1 to 1 1/4 cups buttermilk, plus more for brushing
- 2 teaspoons flaky salt
Bacon Butter:
- 8 slices bacon
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1/8 teaspoon freshly ground pepper
- Pinch kosher salt
🍳INSTRUCTIONS:
Step1:
Preheat oven to 425 degrees Fahrenheit and place rack in center of oven. Line a baking sheet with parchment paper and set aside.
Step2:
In a large bowl, whisk flour, baking powder, 1 teaspoon pepper, salt, sugar, and baking soda. Cut butter into flour and stir until combined, then stir in 1 cup buttermilk, plus 1/4 cup more if needed, until a rough dough forms.
Step3:
Turn dough out onto work surface, knead lightly, then pat into 8- inch squares. Cut into 9 square biscuits and place on prepared baking sheet, about 2 inches apart. Brush tops of biscuits with buttermilk and sprinkle with flaky salt and remaining 1/2 teaspoon pepper. Bake for 20 minutes, until tops are golden brown and biscuits are puffy and cooked through.
Step4:
Spread with bacon butter and serve.
Bacon Butter:
Step1:
In a skillet over medium heat, fry bacon for 3 to 5 minutes per side, until slightly crisp. Drain bacon on a paper towel- lined plate, pour grease into bacon grease saver and reserve 1 tablespoon bacon grease in the pan.
Step2:
Place bacon in a food processor along with butter and reserved bacon grease. Add pepper and salt. Blend until well combined. Refrigerate until butter is firm. Yield: 1/2 cup
