🥓INGREDIENTS- 2 cups self-rising cornmeal
- ¼ cup bacon grease, melted
- 1 tsp. baking soda
- 1 tsp. salt
- 2 eggs
- 2 cups buttermilk
- 1 cup cottage cheese
🍳INSTRUCTIONS:
Step 1:
Preheat oven to 450°F with a 9-inch cast iron skillet inside.
Step 2:
Mix cornmeal, bacon grease, salt, baking soda, eggs, buttermilk, and cottage cheese in a bowl.
Step 3:
Remove hot skillet, coat surface with bacon grease, pour batter into skillet.
Step 4:
Bake 15-20 minutes until toothpick inserted comes out clean. Let rest 5 minutes before serving.
