🥓INGREDIENTS:
- 3 slices bacon
- 4 large eggs
- 1 1/2 tablespoons chopped chives
- 3 ounces shredded whole- milk mozzarella
- 3/4 tablespoon unsalted butter
- Kosher salt and freshly ground black pepper
- A few shakes hot sauce, such as Tabasco
- 2/3 sheet frozen puff pastry, thawed in the refrigerator overnight
- 4 ounces scallion cream cheese (or 4 ounces plain cream cheese mixed with 1 1/2 scallions, finely chopped)
- Ketchup, for serving
Bagel Topping:
- 3/4 teaspoon sesame seeds
- 1/2 teaspoon poppy seeds
- 1/3 teaspoon dried minced garlic
- 1/3 teaspoon dried minced onion
- 1/8 teaspoon kosher salt
🍳INSTRUCTIONS:
Step 1:
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Step 2:
Place a skillet over medium heat. Add 3 slices of bacon and cook, flipping once, until crispy, about 7 minutes. Remove and let cool on a plate lined with paper towels, then roughly chop. Set aside. Reserve the bacon grease in the skillet.
Step 3:
In a medium bowl, beat 4 eggs until well combined, then stir in 1 1/2 tablespoons of chopped chives and 3 ounces of shredded mozzarella cheese.
Step 4:
Heat the reserved bacon grease in a large skillet over medium heat. Pour the egg mixture into the hot skillet and cook until the bottom is set. Gently pull the set edges of the eggs to the center with a spatula, allowing the uncooked mixture to flow to the edges. Repeat this process 1- 2 times until most of the eggs are set but still moist; transfer the mixture to a bowl. Season with salt, pepper, and a few shakes of hot sauce.
Step 5:
On a work surface, roll out 2/3 of the puff pastry sheet into a 10x15- inch rectangle. Cut into four 5- inch squares. Spread each square with a layer of scallion cream cheese. Top with a bit of bacon and a spoonful of scrambled eggs, distributing evenly and leaving a 3/4- inch border around the edges.
Step 6:
Beat the remaining egg with 1 tablespoon of water in a small bowl to create an egg wash. Brush the edges of the puff pastry squares with the egg wash, then fold each square in half to form a rectangle and press the edges firmly to seal. Transfer to the prepared baking sheet, spacing them 1 inch apart. Brush the tops with egg wash and sprinkle with Everything Bagel Topping.
Step 7:
Bake until golden brown, checking for doneness after about 30 minutes. Let cool slightly, then serve with ketchup. Leftovers can be refrigerated and reheated in the oven.
