🥓INGREDIENTS:
- 12 slices thick- cut bacon
- 2 eggs
- 1/3 c. milk
- 1 c. all- purpose flour
- Freshly cracked black pepper
- Vegetable oil
- For gravy
- 1 Tbsp. butter
- 2 Tbsp. all- purpose flour
- Kosher salt
- Freshly ground black pepper
- Pinch paprika (optional)
🍳INSTRUCTIONS:
Step 1:
In a shallow bowl, whisk together the eggs and milk. Place the flour in another shallow bowl and season with a generous pinch of black pepper. Coat the bacon in the flour first, then the egg mixture, then the flour again.
Step 2:
Heat the oil in a large skillet over medium heat (the oil should come 1 inch above the sides of the pan) until it starts to bubble after a small amount of flour is added. Add the bacon and fry until golden, about 2 minutes per side. Reserve 1 tablespoon of the bacon grease in the pan and pour the rest in our bacon grease saver. Transfer the bacon to a paper towel- lined plate to cool slightly.
Step 3:
Make the gravy: Melt the bacon grease from the previous step in a large skillet over medium heat and melt the butter along with it. Add the flour and cook until golden and bubbling, 2 to 3 minutes. Stir in the milk and bring to a boil. Season with salt, pepper, and paprika (if using). Bring the mixture to a boil and cook until slightly thickened, 3 to 4 minutes. (It will thicken even more as it cools!) Remove from the heat.
Step 4:
Serve the bacon with the gravy for dipping.
