BACONNAISE

🥓INGREDIENTS:
- ¾ cup rendered bacon grease, melted
- ¾ cup canola oil
- 2 large egg yolks
- 2 tbsp. mayonnaise (optional)
- 1 tbsp. water, plus more to adjust consistency
- Lemon juice to taste
- 1 tbsp. Dijon mustard
- Salt and pepper
- 4 strips crisp bacon, crumbled
- 2 scallions, sliced

🍳INSTRUCTIONS:
Step 1:
Combine bacon grease and canola oil in a measuring cup.
Step 2:
In a food processor, combine egg yolks, Dijon mustard, mayonnaise, and water. Process for 5 seconds.
Step 3:
With the processor running, slowly drizzle in the fat mixture, stopping to scrape down sides. Adjust with lemon juice, salt, pepper, and water until thick and smooth.
Step 4:
Stir in crumbled bacon and scallions, if using. Store in an airtight container in the fridge for up to two weeks.
