🥓INGREDIENTS:
- 1 lb. bacon, cut into 1"pieces
- 1 onion, finely chopped
- 4 shallots, minced
- 2 cloves garlic, minced
- 1/2 c. brown sugar
- 1/4 c. maple syrup
- 1/3 c. apple cider vinegar
- 1 tsp. chili powder
- 2 tbsp bacon grease
🍳INSTRUCTIONS:
Step 1:
In a medium saucepan over medium heat, cook the bacon until crispy. Transfer the bacon to a paper towel- lined plate, reserving 2 tablespoons of the bacon grease in the pan.
Step 2:
Reduce the heat to medium- low. Add the onion and shallots to the pan with the reserved bacon grease and cook, stirring often, until the onions are caramelized, about 15 minutes.
Step 3:
Stir in the garlic, brown sugar, maple syrup, apple cider vinegar, chili powder, and cooked bacon. Bring the mixture to a simmer, then reduce the heat to low. Cook until the liquid has reduced and thickened, and the onions are jammy, about 7 to 10 minutes.
Step 4:
Let cool before transferring to a jar. Serve with cheese and crackers or use as a delicious topping for a burger.
